UNIFORM RETAIL MEAT IDENTITY STANDARDS (URMIS) RESOURCES

Over the last couple of decades, different meat cut names are being used in food service, retail marketing and culinary education. These names can cause confusion within the industry and with consumers.

This section provides separate downloadable lists for common meat cut names used by each segment. Lists for Unapproved Retail Names, Food Service Names, and Culinary Names provide a cross-reference to the corresponding URMIS system name. This will help in reducing confusion and provide an educational tool.

These lists provide the necessary training tools to equip the retail industry with knowledge and help create marketing tools to educate consumers and help clear confusion and bridge gaps between the retail, food service and culinary segments.
